Aairbei Maaskaas Tert
Ingredients
- 1 packet Tennis biscuits (or similar plain tea biscuits)
- 1 can condensed milk
- 250 ml cream cheese
- 30 ml lemon juice
- 1 dessertspoon gelatine, dissolved in a little water
- 250 g strawberries, sliced
- 150 g cape gooseberries (or English gooseberries)
- Cornflour to thicken the topping sauce if needed
Method
- Whip together the condensed milk, cream cheese and lemon juice until smooth.
- Add the dissolved gelatine to set the filling.
- Arrange biscuits in a layer across the base of a loose-bottomed (springform) tin and top with sliced strawberries.
- Pour the filling mixture over the biscuit and strawberry base.
- Refrigerate until fully set.
- Decorate the top with gooseberries and extra strawberries before serving.
