This dish brings back the smell of onions slowly softening in a pan while the potatoes bubbled away on the stove — the kind of simple, honest food your mum made without thinking twice. Creamy mash topped with sweet, golden onions was always the thing that made a plate feel complete, whether it was a weeknight supper or a Sunday roast. Ingredients
- 1 kg potatoes, peeled and cooked
- 4 garlic cloves (cooked with the potatoes)
- 100 ml cream
- 60 ml olive oil
- Salt and black pepper
- 60 ml grated Parmesan
- *For the caramelised onions:**
- 2 onions, sliced into rings
- 30 ml butter
- 2 tsp sugar
Method
- Boil the potatoes and garlic in salted water until tender; drain and mash finely.
- Stir in the olive oil and cream and beat until smooth; season with salt and pepper.
- In a frying pan, sauté the onion rings in butter, sprinkle with the sugar and continue to fry, stirring, until golden and caramelised.
- Spoon the mash into a serving dish.
- Top with the caramelised onions and sprinkle with parmesan.
