Alledaagse Broccoli Slaai
The crisp broccoli, the creamy dressing — it all comes together in a way that feels familiar without ever becoming boring. It's the kind of salad that showed up at braais, school functions, and weeknight suppers, always met with that small smile people give when they recognise something they've enjoyed many times before. Simple, colourful, and surprisingly satisfying, it's a bowl that disappears faster than anyone expects.
Ingredients
- 900 g baby potatoes, cooked in salted water and drained
- 450 g broccoli, blanched or lightly cooked
- 5 spring onions, sliced
- 225 g Edam cheese, cubed
- Salt and black pepper to taste
- 150 ml vinaigrette (see easy vinaigrette recipe)
- 3 tbsp cream (optional, for a richer dressing)
Method
- Halve or quarter the baby potatoes as needed, cook in salted water and drain.
- Toss the potatoes, broccoli, spring onions and cheese together.
- Pour the vinaigrette over and mix well; add cream if you like a richer dressing.
- Season to taste and serve chilled or at room temperature.
