## Ingredients
- 125 g plain flour, plus a pinch of salt
- 2 eggs
- 75 g butter, melted and cooled
- 250 ml beer (Castle Lager if you can get some)
- 1 egg white, whipped to stiff peaks

Method
- Separate one of the eggs into yolk and white.
- Whisk the unseparated egg with the separated yolk. Stir in the cooled melted butter, then mix into the flour and salt.
- Add the beer and whisk well.
- Let the batter rest for 1 hour. Pat fish completely dry before battering.
- Whip the egg white to stiff peaks and fold gently into the rested batter just before using.
- Dip the fish in the batter and deep-fry in hot oil until crisp and golden.
