Blomkool & Kaas Sop always had a way of bringing quiet comfort — a pale, creamy bowl with the soft sweetness of cauliflower and the mellow richness of melted cheese. It was the kind of soup that made people linger a little longer, warming their hands around the bowl while the flavour settled into something familiar and deeply satisfying.
Ingredients
- 1 large cauliflower, broken into florets
- 5 tbsp butter
- 600 ml chicken stock
- 250 ml milk
- 250 ml grated strong cheddar (or similar)
- Pinch of nutmeg
- Salt and black pepper to taste
Method
- Melt the butter in a pot, add the cauliflower and cook briefly.
- Pour in the chicken stock and milk, bring to a simmer and cook until cauliflower is tender.
- Purée the soup until smooth, return to a gentle heat and simmer.
- Stir in the grated cheese and remaining butter until melted and incorporated.
- Season with nutmeg, salt and pepper.
- Serve hot with freshly baked bread.
