Ingredients
- 1 large cauliflower, cooked and drained
- 1 onion, sautéed
- 1 sweet pepper, sautéed
- Baby marrow (courgette), sautéed
- Salt and pepper to taste
- Knob of butter
- Cheese sauce (make a simple sauce: milk, butter, flour, cheese)
- Grated cheese mixed with breadcrumbs for topping
Method
- Preheat the oven to 180°C.
- Cook cauliflower until just tender, drain and place in an ovenproof dish.
- Sauté onion, sweet pepper and baby marrow in butter; season with salt.
- Pour the sautéed vegetables over the cauliflower, then pour over the cheese sauce.
- Mix grated cheese with breadcrumbs and sprinkle over the sauce.
- Bake for 30 minutes until golden and bubbling.
