Bobotie 2BobotieIngredients500 g minced meat1 small sweet pepper, chopped1 green apple, grated1 large onion, finely chopped1 garlic clove, crushed1 tsp paprika4 tsp Rajah curry powder (or alternative — choose mild, medium or hot)0.5 tsp turmeric0.5 tsp ground coriander0.5 tsp ground ginger0.5 tsp mixed herbs2 slices white bread, soaked in 125 ml milk and squeezed dry1 tsp salt1 tsp baking powder6 tsp apricot jam3 tsp vinegar0.5 tsp beef stock powder1 eggMrs Ball's chutney, to serveTopping:2 eggs1 cup milk0.5 tsp salt4 bay leavesMethodPreheat the oven to 180°C.Cook the mince until browned. Add all the spices.Sauté the onion and pepper briefly, then add the mince ingredients and mix well.Mix the soaked bread with the apricot jam, baking powder, egg and vinegar; add to the mince mixture and stir in well.Pack the mixture into an oven dish.Beat together the topping ingredients (eggs, milk and salt) and pour over the mince.Tuck bay leaves into the top.Bake for about 20–25 minutes until the topping is set and the bobotie is cooked through.Serve with turmeric rice mixed with raisins, Mrs Balls chutney and a side salad.
