Broccoli Sop
The kind of soup people reached for on days when they wanted something simple and steady, the sort of bowl that warmed you without asking for attention.
Ingredients
- 250 g butter
- 250 g plain flour
- 1 litre chicken stock (or 1 litre boiling water with 3 stock cubes)
- 1 kg broccoli, chopped into florets
- 2 cups grated Cheddar
- Salt and pepper to taste
Method
- Melt the butter and stir in the flour to form a smooth roux paste.
- Bring the chicken stock to a simmer in a separate pot.
- Add the broccoli to the stock and cook until tender.
- Purée the broccoli and stock until smooth, then gradually stir back into the roux over low heat.
- Stir in the grated Cheddar until melted and combined.
- Season to taste and keep warm before serving with freshly baked bread.
