Brown & White Rice SaladIngredients1 cup brown rice, cooked1 cup white rice, cooked1 small can sliced pineapple pieces1 green pepper, finely chopped1 onion, finely chopped0.5 cup cooked baby cornHandful of olives2 hard-boiled eggs, halved or chopped*Dressing:**Splash of lemon juice1 tbsp mustard1 tbsp vinegar0.5 tsp salt3 tbsp olive oil1 garlic clove, crushed0.5 tsp paprikaMethodCombine both cooked rices with the pineapple, green pepper, onion, baby corn and olives.Whisk the dressing ingredients together and pour over the salad.Toss well and garnish with the hard-boiled eggs before serving.
