Chutney Vark Tjops
This chutney marinade always started long before the cooking did — your mum standing at the counter, tasting the mixture off the spoon, adjusting it until it was "just right." The bowl would fill with that deep, fruity smell, and the chops went in glossy and hopeful, soaking up every bit of flavour. It was the kind of marinade that made you peek into the fridge more than once, knowing that by the time the meat hit the heat, it would come out sticky, tender, and full of that unmistakable chutney warmth.
Ingredients
- 4 thick leg or loin chops
- 125 ml Mrs Balls chutney (or alternative)
- Salt and black pepper to taste
Method
- Rub chutney, salt and pepper into the chops.
- Marinate in the fridge overnight.
- Grill on the braai (BBQ) until cooked and nicely browned.
