Couscous Hoender
Couscous Hoender was one of those easy, comforting dishes that felt like it made itself — soft, fluffy couscous soaking up the flavours of tender chicken, herbs, and a touch of lemon. Light but satisfying, it was the kind of meal that brought everyone back for "just a little more."
Ingredients
- 250 g chicken, cut into small pieces (leftover or roasted)
- 125 g couscous
- 1 red pepper, chopped
- 1 tomato, diced
- 2 tbsp chopped fresh mint
- Mint leaf to garnish
- *Dressing:**
- 1 tbsp olive oil
- 0.5 tbsp brown vinegar (or cider/apple vinegar)
- 1 tbsp lemon juice
Method
- Lightly fry the chicken pieces in a pan until golden.
- Cook the couscous according to packet instructions, then fluff with a fork.
- Mix the fried chicken with the chopped red pepper, diced tomato and mint.
- Whisk the dressing ingredients together.
- Toss the dressing and chicken mixture through the couscous.
- Serve with a mint leaf on top.
