Die Mostert Ring
Ingredients
- 4 eggs
- 250 ml water
- 125 ml vinegar
- 175 ml sugar
- 3 tsp gelatin
- 3 tsp mustard powder
- 0.5 tsp turmeric
- Pinch of salt
- 250 ml cream, whipped to stiff peaks
- Non-stick cooking spray for the ring mould
Method
- Whisk the eggs in the top part of a double boiler.
- Add the water and vinegar and whisk together.
- In a separate bowl combine the sugar, gelatin, mustard powder, turmeric and salt; mix well.
- Add the dry mixture to the egg mixture and stir thoroughly.
- Place over simmering water (double boiler) and stir continuously until the mixture thickens.
- Remove from heat and cool until lukewarm, stirring occasionally to prevent a skin forming.
- Whip the cream to stiff peaks and fold gently into the lukewarm mustard mixture.
- Pour into a ring mould greased with non-stick spray and chill until fully set.
- Unmould and serve.
