Gou Vis in Sous (Quick Fish in Sauce)
Gou Vis in Sous
Ingredients
- Butter for greasing the oven dish
- 1 large onion, sliced
- 600 g white fish portions
- 50 g butter
- 50 g plain flour
- 500 ml milk
- 500 ml grated cheese
- Salt and pepper to taste
- Bunch of spring onions, finely chopped
- Paprika, Parmesan and red pepper to sprinkle
Method
- Preheat the oven to 180–200°C.
- Grease an ovenproof dish with butter.
- Arrange the onion slices in the bottom of the dish.
- Season the fish portions with salt and pepper and place them on top of the onions.
- Melt the butter in a pan, stir in the flour and cook briefly. Gradually whisk in the milk and bring to the boil, cooking until thickened.
- Stir the grated cheese, salt and chopped spring onion into the sauce.
- Spoon the sauce over the fish, sprinkle paprika, Parmesan and red pepper over the top.
- Bake for 30 minutes until fully cooked.
