Heerlike Hoender Kasserol
Ingredients
- Chicken stock:
- 1 large chicken
- 1.5 litre water
- 1 tsp mixed herbs
- 3 whole cloves
- 1 tsp ground ginger
- 1 tsp ground coriander
- Black pepper
- Casserole:
- 500 g packet macaroni
- 250 g bacon lardons
- 2 onions, finely chopped
- 300 g mushrooms, sliced
- 30 g butter
- 1 celery stalk, chopped
- 2 tbsp fresh parsley, chopped
- 4 cups grated cheese
- 3 cups milk
- 6 eggs
Method
- Preheat the oven to 180–200°C.
- Poach the whole chicken in the water with the mixed herbs, cloves, ginger, coriander and some black pepper.
- Remove, debone and flake the meat; reserve about 1 litre of the cooking stock.
- Cook the macaroni until just tender and drain.
- Fry the bacon until crisp, add the onions and sauté; add the mushrooms and butter and cook briefly.
- In a large bowl combine the flaked chicken, about 1 litre stock, cooked macaroni, bacon mixture, celery and parsley; season with salt and pepper.
- Put half the mixture into an oven dish, sprinkle half the cheese over it, add the remaining chicken mixture and top with the remaining cheese.
- Whisk the eggs with the 3 cups of milk and pour evenly over the casserole.
- Bake for about 45 minutes until set and golden.
- Serve with bread rolls and salads.
