Hoender Bier Marinade
This beer marinade brings back memories of Saturday braais where the chicken always went into the dish first, long before the fire was even ready. Your mum would whisk everything together in a big bowl, pour the foamy beer over the pieces, and give it that gentle shake only she could do. The smell of the marinade alone — tangy, savoury, a little sweet — meant you were in for a proper family feast. By the time the chicken hit the coals, everyone was already hungry.
Ingredients
- 6 chicken thighs or breasts
- 375 ml chicken stock
- 410 g onion and tomato mix (tinned chopped tomatoes with onions, or Chakalaka)
- 250 ml beer (Castle Lager or similar)
- 50 ml vinegar
- 3 tsp Worcestershire sauce
- 6 tsp brown sugar
- 6 tsp prepared mustard
- Salt and pepper to taste
Method
- Poach the chicken briefly in the chicken stock.
- Mix the remaining ingredients together and pour over the chicken.
- Marinate in the fridge overnight.
- Grill on the braai (BBQ) until cooked through and nicely browned.
