Kaaspoffers
Those little golden puffs rising quickly in the oven, filling the air with the smell of cheese and something savoury you couldn't quite name but always recognised. They were light, warm, and gone almost as soon as they were set down — usually claimed by the ones who knew to take two before anyone else noticed.
Makes 18.
Ingredients
- 60 g butter
- 4 large eggs
- 1 tsp salt
- 250 g plain flour
- 1 tsp mustard powder
- 1 heaped tbsp baking powder
- 400 g grated mature cheese of choice
- 250 ml milk
Method
- Beat the butter and eggs together.
- Combine the dry ingredients, then add the cheese and milk.
- Fold the wet and dry mixtures together until just combined.
- Spoon into muffin tins and bake at 180°C for 10–15 minutes until risen and golden.
