Kerrie Noodles (Curry Noodles)
Kerrie Noodles
Ingredients
- 500 g medium egg noodles
- 1 large onion, chopped
- 1 large green pepper, chopped
- *Sauce:**
- 250 ml tomato sauce
- 170 g sugar
- 125 ml oil
- 125 ml white vinegar
- 5 tsp Rajah curry powder (or any mild curry powder)
- 1 tsp black pepper
- 2 drops Tabasco (optional)
- 1 can sliced peaches (optional)
Method
- Cook the noodles and rinse under cold water to cool; drain well.
- Chop the onion, green pepper and optional sliced peaches.
- Mix the sauce ingredients in a pan and simmer briefly with the chopped onion and green pepper.
- Combine the sauce with the cooled noodles and mix through.
- Chill in the fridge before serving. Goes great with a braai.
