Krakerige Rys & Appel Slaai (Crunchy Rice & Apple Salad)
Krakerige Rys & Appel Slaai
The cool rice, the crisp apples, and the gentle sweetness in the dressing made it a favourite at Sunday lunches and church teas. It was light, refreshing, and quietly moreish — the sort of dish people kept adding "just a little more" of to their plates.
Ingredients
- Fried bacon or pancetta
- 250 ml cooked rice
- 2 spring onions, sliced
- Handful of mushrooms, sliced
- Handful of celery, chopped
- 1 apple, chopped (add last so it stays crisp)
- 1 tbsp Mrs Ball's chutney
- 1 tsp mixed dried herbs
- 1 tsp Rajah curry powder
Method
- Fry the bacon until crisp; slice mushrooms and prepare remaining vegetables.
- Toss the cooked rice with the bacon, spring onion, mushrooms, celery, Rajah and apple.
- Fold in a little chutney and sprinkle with mixed dried herbs to taste.
- Chill briefly before serving.
