Lekker Pampoenkoekies
Soft, golden pampoenkoekies are the taste of childhood Sundays — those fluffy little pumpkin fritters your ma or ouma would flip in a pan while the whole house smelled like cinnamon and comfort. Light, warm, and just a little bit sticky, they arrive at the table dusted with cinnamon sugar that melts the moment it touches the hot fritter.
They're the treat you ate straight from the pan, burning your fingers because you couldn't wait. The ones served next to a roast, or as a "just because" dessert when the family gathered. Sweet, simple, and unmistakably South African — a small spoonful of home on a plate.
Ingredients
- 2 cups cooked pumpkin, mashed
- 3 eggs, whisked slightly
- 125 g self-raising flour (or plain flour + 1 tsp baking powder)
- 1 tbsp sugar
- Pinch of salt
- Pinch of cinnamon
- Oil for frying
Method
- Mix pumpkin, eggs, flour, baking powder (if using plain flour), sugar, salt and cinnamon into a batter.
- Fry spoonfuls in hot oil until golden and cooked through.
- Mix sugar with cinnamon and dust before serving warm. Drizzle syrup as an alternative.
