Maaskaas & Bacon Bolaag (Mascarpone Cheese and Bacon Potato Filling)
Maaskaas & Bacon Bolaag
**Makes filling for about 3 large baked potatoes.** Before baking, prick both sides of each potato. When soft, remove from the oven, cut a cross on one side and squeeze from the bottom to open. Scoop out some flesh to make room for the filling. You can also bake the potatoes in foil directly in a charcoal braai.
Ingredients
- 125 g bacon, chopped
- 125 ml spring onion, finely chopped
- 0.5 onion, finely chopped
- 250 g mascarpone (or soft cheese)
- Tabasco, salt and black pepper
- Bunch of freshly chopped parsley
Method
- Fry the bacon until crisp, add the spring onion and chopped onion and cook briefly.
- Mix with the mascarpone and season with Tabasco, salt and pepper.
- Fill potatoes with the mixture and sprinkle with parsley.
