These baked potatoes are pure South African comfort — the kind of dish my mum would slip into the oven when she needed something easy, warm, and guaranteed to make everyone happy. Soft, fluffy aartappels covered in a creamy mustard mayo glaze that browns just right… it's the taste of weeknight suppers, enamel roasting pans, and that familiar smell drifting through the house long before dinner was called.

Ingredients
- 4 large potatoes, sliced into disks
- Salt and pepper
- 100 ml mayonnaise
- 2 tbsp whole-grain mustard
- 1 cup shredded mozzarella
Method
- Preheat the oven to 180°C.
- Parboil the potato slices in salted water until just tender, then drain.
- Layer the potatoes in an ovenproof dish, seasoning with salt and pepper as you go.
- Mix the mayonnaise with the mustard and spread over the potatoes.
- Sprinkle the mozzarella evenly over the top.
- Bake for 15–20 minutes.
- Place under a hot grill until the cheese is golden and bubbling.
