There was always something a bit magical about Nagemaakte Kreef — the way a simple piece of hake or cod could be transformed into something that tasted like a treat. It was the kind of dish that appeared when money was tight but pride was strong, when a clever cook could turn everyday fish into a "fancy" starter that made everyone smile. Light, tender and gently seasoned, it carried that unmistakable feeling of making do, making magic, and making memories all at once.
Ingredients
- 1 kg cooked white fish, flaked (e.g. cod or hake)
- 125 ml cream
- Dash of Worcestershire sauce
- A few drops of Tabasco
- 125 ml mayonnaise
- 125 ml milk
- 1 tsp fresh lemon juice
- Sandwich spread, to taste (a small amount as binder)
Method
- Flake the cooked white fish into small pieces.
- In a bowl combine cream, milk, mayonnaise, Worcestershire sauce, Tabasco, lemon juice and a little sandwich spread; mix until smooth.
- Fold the flaked fish into the sauce gently until evenly coated.
- Adjust seasoning to taste.
- Chill in the fridge for at least 1 hour before serving to let the flavours meld.
- Serve as a seafood-style salad on freshly baked bread, in canapé cups or with crackers.
