Oat Koekies
As a child, the best part was stirring the warm syrup into the oats, watching the mixture turn glossy and golden, thick enough to cling to the spoon but soft enough to shape.
The koekies always baked quickly, their edges turning crisp while the centres stayed just a little chewy. You'd hover near the oven door, pretending not to be waiting, but the smell gave you away every time. When the tray finally came out, the cookies crackled softly as they cooled, tiny sugar bubbles settling into place.
Ingredients
- 250 g oats
- 125 g plain flour
- 250 ml desiccated coconut
- 150 g sugar
- 225 g butter
- 1 tbsp golden syrup (or maple syrup or treacle)
- 1 tsp baking soda
- 1 tsp salt
Method
- Preheat the oven to 180°C.
- Melt the butter, syrup and sugar together.
- Stir in the baking soda (it will foam).
- Combine the oats, flour and coconut. Add to the melted mixture and mix well.
- Press firmly into a pan and bake for about 15 minutes.
- Once cool, cut into squares and store in an airtight container.
