Paella South African Style Version 2
Ingredients
- 500 g cooked chicken, shredded or in pieces
- 500 g peeled prawns
- 500 g fish, diced
- 500 g crab meat
- 500 g calamari rings
- Cornflour for dusting
- Salt and pepper to taste
- 1 large can mussels, drained (reserve the liquid)
- Rice mix:
- 750 g raw rice
- 3 tsp turmeric
- 2 tsp salt
- 2 chicken stock cubes
- 125 ml water
- Vegetable mix:
- 2 onions, chopped
- 3 garlic cloves, crushed
- 1 green pepper, chopped
- 50 ml oil
- 1 large can chopped tomatoes
- 2 tbsp good sherry
Method
- Keep the cooked chicken chilled until needed.
- Toss the calamari and fish in a little cornflour and season with salt and pepper.
- Sear the seafood (fish, crab, calamari) quickly in a very hot pan until warm.
- Cook the rice with the turmeric, salt, dissolved stock cubes and 125 ml water. Add the reserved mussel liquid to the rice.
- Sauté the onions, garlic and green pepper in oil, add the chopped tomatoes, sherry, salt and pepper and simmer for about 8 minutes.
- Combine the rice, the tomato/vegetable mixture, the seafood, prawns, crab, calamari and chicken. Gently heat through and serve.
