Reenboog Botter
Rainbow butter is a playful, colourful compound butter often used for sandwiches, party rolls or to brighten a platter. It's simple, nostalgic and very South African in its love of colourful presentation. I have so many memories of this at parties.
Ingredients
- 250 g unsalted butter, softened to spreadable
- 1 tsp icing sugar (optional, for lightly sweet version) or 0.5 tsp fine salt (for savoury)
- 1 tsp vanilla extract (optional for sweet) or 1 tsp lemon juice (optional for savoury)
- Food colouring gel in a few colours — red, yellow, green, blue, purple (concentrated gel works best)
Method
- Beat the butter with sugar or salt and your chosen flavour (vanilla or lemon) until smooth and spreadable.
- Divide the butter into separate small bowls — one bowl per colour.
- Tint each portion with a small dab of gel food colouring; mix until the colour is even and vibrant.
- On a piece of cling film or baking parchment, pipe or spoon stripes of each coloured butter side-by-side in a long log, keeping the colours in your preferred order.
- Roll the cling film tightly over the butter to form a neat log, twisting the ends to seal.
- Chill in the fridge for at least 1 hour to firm up.
- Slice into rounds to serve, or unwrap and use as a colourful butter log.
