Rykman Hoender (Rich Mans Chicken)
Rykman Hoender
Rykman Hoender always had a certain quiet swagger to it — not flashy, not fussy, just unmistakably generous.
Ingredients
- 1 large chicken, jointed into portions
- Salt and pepper
- 50 ml butter
- 50 ml plain flour
- 1 tbsp mustard
- 400 ml milk, plus 100 ml yogurt
- 1 tsp wholegrain mustard
- 1 cup grated cheese
- 410 g canned apple pieces, drained
- 410 g cooked button mushrooms
- 2 cups breadcrumbs
Method
- Preheat the oven to 180°C.
- Brown the chicken portions in oil; remove and set aside.
- Melt 50 ml butter, stir in 50 ml plain flour and cook briefly.
- Whisk in about 400 ml milk and cook for 1 minute; remove from heat.
- Add 1 tsp wholegrain mustard and blend until smooth.
- Return to the stove and simmer gently; season to taste.
- Stir in the cheese until melted.
- Mix 100 ml yogurt with 1 tbsp lemon juice and fold in the canned apples and mushrooms.
- Pour this mixture over the chicken in a baking dish.
- Sprinkle 2 cups of dry breadcrumbs over the top.
- Cover and bake for 20 minutes, then uncover and bake a further 20 minutes until golden and heated through.
