Sampioen en Feta Slaai (Mushroom and Feta Salad)
Sampioen en Feta Slaai
Ingredients
- 250 g feta, cubed or crumbled
- 250 g mushrooms
- 2 red sweet peppers, sliced
- 300 g spinach, chopped
- 250 g cherry or small tomatoes
- 100 g almonds
- 3 celery stalks, sliced
- *Dressing:**
- 160 ml olive oil
- 50 ml dry white wine (Chenin Blanc or Chardonnay works well)
- 1 garlic clove, finely chopped
- 3 tsp dried or freshly chopped parsley
Method
- Whisk the dressing ingredients together.
- Lightly sauté or marinate the mushrooms and red peppers as preferred; allow to cool.
- Combine mushrooms, peppers, spinach, tomatoes, almonds, celery and feta in a large bowl.
- Pour the dressing over the salad, toss to combine and transfer to a lidded container.
- Marinate overnight in the fridge before serving.
