Seekos Bolaag (Seafood Potato Filling)
Seekos Bolaag
**Makes filling for about 3 large baked potatoes.** Before baking, prick both sides of each potato. When soft, remove from the oven, cut a cross on one side and squeeze from the bottom to open. Scoop out some flesh to make room for the filling. You can also bake the potatoes in foil directly in a charcoal braai.
Ingredients
- 50 ml seafood mayonnaise (1 tbsp plain mayo + 1 tbsp seafood sauce)
- 125 g cooked prawns
- 1 tsp sugar
- 100 g smoked haddock (or similar cooked fish), flaked
- Salt and black pepper to taste
- 1 tsp tomato sauce
Method
- Mix prawns, flaked fish, mayo, sugar and tomato sauce together.
- Season to taste and fill baked potatoes.
