Soetrissie en Salami Slaai (Sweet Pepper and Salami Salad)
Soetrissie en Salami Slaai
Ingredients
- 1 red, 1 green & 1 yellow sweet pepper
- 2 garlic cloves, finely chopped
- 3 tsp dried thyme
- 2 tbsp olive oil
- 100 g salami, cut into strips
- 100 g black olives
- 150 g feta cheese
- Salad leaves
- Fresh basil, torn (or 2 tsp dried basil)
- *Dressing:**
- 40 ml olive oil
- 4 tsp vinegar
- 2 garlic cloves, crushed
- Black pepper to taste
Method
- Slice the peppers into thick strips.
- Sauté the peppers with the garlic and thyme in oil for about 2 minutes, then cover and cook for a further 5 minutes. Allow to cool.
- Combine salami, olives, feta, salad leaves and cooled pepper mixture; add torn basil.
- Whisk the dressing ingredients together and toss with the salad before serving.
