Ingredients
- 250 g ricotta cheese
- 250 g mascarpone or thick cream cheese
- 1 tsp grated lemon zest
- 2 egg yolks
- 1 tsp cinnamon
- 3 tsp cake flour
- 4 tbsp caster sugar
- 50 g currants
- Salt and black pepper
Method
- Whisk the cheese mixture until smooth.
- Fold in the remaining ingredients.
- Place about 3–4 tsp of filling in the centre of each small pancake.
- Fold into small parcels and place on a baking tray.
- Brush with butter.
- Bake for about 20 minutes.
- Let rest so the cheese can set before serving.
