Spek & Kaas Aartappels were always the dish that disappeared first — those little baby potatoes tossed with crispy bacon and melted cheese, still sizzling when they hit the table. It's the kind of food your mum made when she wanted something hearty without any fuss: one pan, big flavour, and everyone reaching for seconds. The smell alone — bacon frying, cheese bubbling — could pull the whole family into the kitchen long before supper was ready.
Ingredients
- 20 baby potatoes
- 200 g cubed cheese (mature cheddar or mozzarella)
- Bunch of fresh basil leaves
- 20 strips streaky bacon
- Salt and black pepper
Method
- Preheat the oven to 200°C.
- Wash and halve the baby potatoes.
- Place a cube of cheese and a basil leaf on each potato half.
- Wrap each potato with a strip of bacon and secure with a toothpick.
- Arrange in an ovenproof dish.
- Bake at 200°C for 15–20 minutes until the bacon is golden and crispy.
