Arriving at the field on sports days and events, cheeks cold from running and the world alive with shouts and whistle blows, then being pulled into a different kind of warmth. The long trestle table by the clubhouse where my mum and the other mums turned batter into small miracles. The pan hissed and the batter spread into thin, trembling discs; a dusting of cinnamon and sugar caught in the steam and rose like a promise.
Our mums moved with practised calm, flipping and stacking while arms reached from every direction for the next warm pancake. Between the scent of cinnamon, the sweet tang of syrup and the faint smell of wet grass, each pancake felt like belonging — a simple handover of care that made sports days feel like home.
Ingredients
- 4 eggs
- 1.25 litres water
- 1 cup oil
- 50 ml vinegar
- 1 tsp bicarbonate of soda
- 1 tsp salt
- 500 g (4 cups) plain flour
- 4 level tsp baking powder
Method
- Whisk everything together, adding the baking powder last. Rest the batter for at least 30 minutes.
- Cook thin pancakes in a hot pan.
- Sprinkle over your filling of choice.
