Steak Souse: Sampioen Sous
Whether on the grill or the BBQ, here are some options to make sauces to go over all types of steaks. The quantities below are not a precise science — Mum used to just grab a handful here and there, so please adjust as per your flavour preference.
Ingredients
- Knob of butter
- 1 onion, chopped
- 75 g bacon lardons
- Mushrooms, chopped
- Sweet wine
- 1 tsp tomato paste
- 1 tsp sugar
- Salt and pepper
- 1 tsp paprika
- Fresh basil, chopped
Method
- Sauté onions and bacon, add mushrooms.
- Deglaze with wine.
- Stir in tomato paste and seasoning and simmer.
