Steak Souse: Tapenade Sous
Whether on the grill or the BBQ, here are some options to make sauces to go over all types of steaks. The quantities below are not a precise science — Mum used to just grab a handful here and there, so please adjust as per your flavour preference.
Ingredients
- Green olives
- 2 anchovies
- 1 tin drained tuna
- 1 tsp lemon juice
- Fresh parsley
- Dash of olive oil
- Salt and pepper
Method
- Blend or finely chop to make a chunky olive-anchovy paste.
- Finish with lemon juice, salt and pepper, parsley and oil.
