Stel Wortel Slaai
Stel Wortel Slaai has that unmistakable old-school charm. It's the kind of salad that showed up in glass dishes at family gatherings, always made a day ahead so the flavours could settle properly. A salad that feels like it belongs to another time yet still finds its way onto modern tables because it simply works.
Ingredients
- 440 g can crushed pineapple, drained (reserve the juice)
- Top up pineapple juice to 250 ml with water
- 1 packet lemon (sour) jelly
- 100 g sugar
- Pinch of salt
- 2 cups finely grated carrots
- 125 ml cream, whipped to soft peaks
Method
- Heat the pineapple juice (topped up to 250 ml) and pour it over the jelly powder to dissolve.
- Let the jelly cool until just beginning to thicken.
- Whisk in the sugar a little at a time, then add the salt.
- Stir the drained crushed pineapple and grated carrots into the slightly thickened jelly.
- Fold in the whipped cream gently.
- Pour into a serving dish or mould and chill until fully set.
- Serve as a colourful centrepiece.
