Tzaneen Pasta Slaai (Tzaneen Pasta Salad)
Tzaneen Pasta Slaai
Ingredients
- 500 g spiral pasta, cooked, cooled and drained
- 1 tin chickpeas, drained
- 15 cherry tomatoes, halved
- 0.5 cucumber, diced
- 5 spring onions, chopped
- 1 red sweet pepper, diced
- 225 g feta, cubed
- *Dressing:**
- 100 ml olive oil
- 80 ml balsamic vinegar
- 1 tbsp chopped parsley
- Salt and black pepper to taste
Method
- Combine the pasta, chickpeas, tomatoes, cucumber, spring onions, red pepper and feta in a large bowl.
- Whisk the dressing ingredients together and pour over the salad.
- Season with salt and pepper, stir in the chopped parsley just before serving and serve with freshly baked bread.
