Vark Kasserol
Ingredients
- 1 kg pork, cut into pieces
- Oil for frying
- 3 onions, sliced
- 3 garlic cloves, chopped
- 1 tsp fresh grated ginger
- 25 ml vinegar
- Salt and pepper to taste
- Handful of grated mature cheese and chopped fresh parsley for topping
Method
- Preheat the oven to 160°C.
- Brown the pork in oil.
- Add the onions, garlic, grated ginger, vinegar, salt and pepper. Mix well.
- Transfer to an oven dish, sprinkle with grated cheese and parsley.
- Bake for 60–90 minutes until the pork is cooked through and the topping is melted and golden.
- Serve with mashed potatoes and carrots.
