Vinnige Rice Krispie Blokkies
Rice Krispie Blokkies with dates always felt like the upgraded version of a favourite — the kind of treat that made you open your lunchbox a little faster, hoping today was the day. The dates were chopped small and simmered just long enough to turn soft and sticky, their sweetness deepening into something almost caramel-like.
Ingredients
- 1 large packet Rice Krispies (Rice Crispies)
- 225 g butter
- 100 g sugar
- 500 g pitted dates, chopped
- 1 tsp vanilla
- 1 tbsp lemon juice
Method
- Cook the dates with the butter, sugar and lemon juice until the dates break down and the mixture is smooth.
- Remove from the heat. Stir in the vanilla, then stir in the Rice Krispies.
- Press flat into a tray and refrigerate. Cut into squares once set.
- Store in an airtight container.
