Ingredients
- Handful of spinach
- 3 hard-boiled eggs
- Anchovy fillets
- 4 spring onions
- 6 cherry tomatoes
- Gem lettuce
Method
- Hard-boil the eggs, cool and halve or quarter.
- Arrange spinach and gem lettuce on a plate or in a bowl.
- Add the spring onions, cherry tomatoes, anchovy fillets and eggs.
- Dress with apple cider or balsamic vinegar just before serving.
