Winter Pastei (Winter Pie)
Winter Pastei
Ingredients
- 2 tbsp oil
- 1 kg beef cubes
- 2 cups small onions, halved
- 1 garlic clove, crushed
- 4 carrots, sliced
- 1 tbsp tomato purée
- 2 tsp brown sugar
- 50 ml plain flour (for thickening)
- 300 ml stock
- 1 tsp dried thyme
- 2 bay leaves
- Salt and black pepper
- Puff pastry (or a topping from the Dough section recipe)
Method
- Preheat the oven to 160°C.
- Brown the beef in oil and remove from the pan.
- Simmer beef for 25 minutes until cooked.
- Stir-fry the vegetables (onions, garlic, carrots) until starting to soften.
- Add the tomato purée and brown sugar and mix.
- Blend the flour with the stock to a smooth paste, then stir this into the vegetables and heat until it starts to thicken.
- Season with thyme, bay leaves, salt and pepper.
- Return the beef to the dish and pour the vegetable mixture over the meat.
- Cover with the pastry and bake for about 25–30 minutes until the pastry is golden and cooked through.
